I found the recipe for these no-bake cookie dough truffles on Pinterest. They only take a few minutes to make, plus the time it takes for the dough and chocolate to harden. The not-so-great part is they are definitely NOT healthy :(. It’s ok to indulge every once in a while, though :).
Ingredients:
- 1/3 cup butter, softened
- 1/3 cup brown sugar
- 2-3 teaspoons vanilla (I used 2)
- 1 cup all-purpose flour
- 1 cup milk chocolate chips (I used half milk chocolate and half dark chocolate because that’s what I had on hand)
- 2 cups semi-sweet chocolate chips (for dipping)
- Sea salt (optional)
Directions
Line a baking sheet with wax paper. In a bowl, mix together butter, sugar and vanilla. Add flour and mix just until combined. Stir in the milk chocolate chips. Make one inch balls with the dough and place on the wax paper. Freeze for about 30 minutes (I put mine in the fridge for an hour or so).
When the dough is firm, melt the semi-sweet chocolate chips in the microwave at 50% power (this took several minutes in my microwave – I did it in 1 minute increments). Dip the cookie dough in the chocolate with a fork. Tap off excess chocolate. Place back on wax paper and top with sea salt if desired (sea salt is a MUST!). Place back in the freezer until chocolate has hardened (I put mine in the fridge). Store in the fridge.
